Triple Nut Browned Butter Cookie Ice Cream Sandwiches


It’s happening. Oh…it’s happening. (Quick! Name that movie!)


These cookies were a long time in the making, like, last year long time. They have been nagging me since the first time I made them before Christmas. And the second time when I made them at Christmas. Finally (and I mean FINALLY), the third time I made them, I got them right.

And how did I get them right?


I added more butter. More browned butter. And then ice cream.

Not only am I posting two cookie recipes, which is basically the greatest two-for-one deal since Domino’s did that 2 Times Tuesday Deal (that was a thing, right?). But, in addition to that, I’m so friggin’ tired from workouts and working a long shift today that I’m keeping this short and sweet.

Chocolate and Salted Caramel Sandwich Cookies


I have a bruise the size of a grapefruit on my shin. I’ve been bumping into the corners of walls. I missed a step going downstairs and felt like I was going to plummet to my doom for a split second.


Coming back home has thrown me a bit off kilter. I’m happy as can be to be back where I belong and away from school, but it’s taking some getting used to. My body is used to the dimensions of my apartment. It remembers the feel of the floors. The layout of my kitchen.

Pecan Shortbread Crusted Browned Butter Pumpkin Cupcakes with Cinnamon Cream Cheese Frosting


I’m doing it. I’m getting one more pumpkin recipe in before it’s officially December, and therefore, officially wintertime.


I don’t know why there’s some kind of weird cultural taboo on pumpkin desserts after Thanksgiving, but I’m totally against it. I barely bake enough with pumpkin during autumn, to heck if I’m going to miss prime opportunities for treats that are warm and spicy and flavored with pumpkin.

I made these cupcakes a little more acceptable for this time of year. The “not quite winter but no longer fall” time. The “do I get a pumpkin spice or gingerbread latte?” time. The “my hands are too cold without gloves but too sweaty with them” time. You guys know what I’m talking about right? Anyone? Anyone? (“Bueller? Bueller?”)

Apple Tart with Oat Crumble and Apple Infused Caramel


I accidentally made a tart. Yeap, you read that correctly. I accidentally made a tart.


Initially, I was trying to make hand pies. But my first attempt at those failed abysmally. And they didn’t even involve apples. I was trying a new recipe for dinner with my neighbors and it was the dough and the oven versus me and the timer. Sadly, I was on the losing team. Something, somewhere just didn’t quite go right. My neighbors still ate them, bless their hearts. And, they inspired me in the process!  


With a mouth full of less-than-impressive hand pie one said, “How quickly do apples go bad? You’ve got, like, eight sitting here.” He motioned to my overflowing fruit bowl. Apparently, no proper single gal has eight apples sitting on her counter. I decided not to tell him I had more apples in the fridge…

I knew that despite eating one or two apples a day as a snack, they were going to go south before I got around to finishing them. I figured baking with them would be the best use of my time, but I couldn’t stomach the idea of more cake. Then I remembered the extra pie dough sitting in my fridge and knew exactly what I would do. An apple tart!


When the going gets tough, the tough make tarts.

Mulling Spiced Apple Coffee Cake with Spiced Streusel


This cake was almost the death of me.


Actually, that should be cakeS. These cakes were almost the death of me. Sweet, delicious death. 

I got it into my head that I wanted to make a coffee cake. But not just any coffee cake. No, I needed one that was warm and spicy and speckled with apples. One that was so purely autumnal it warmed the tummy and the soul.

Plus, it needed to be covered with streusel because, let’s be real, coffee cake is just a vehicle for streusel at the end of the day.


I made one cake, and it was good. So good I shared majority of it with my neighbors and coworkers because I didn’t want to eat the whole thing. It wasn’t winning any awards in the looks department though. I knew I could do better.

Pumpkin Oatmeal Caramel Stuffed Cookies


Correct me if I’m wrong, but Gingerbread lattes are supposed to have a lovely dusting of cinnamon on them, correct? No? Am I imagining things? I feel like I am because I’ve gotten a Gingerbread latte three times now and not once has there been anything on top of my milk foam. I just don’t feel complete.


I know there’s supposed to be some kind of tasty, spicy topping on a Gingerbread latte; partially because my memory is pretty darn fantastic when it comes to coffee beverages and partially because I just Googled “does a Gingerbread latte come topped with cinnamon?”

Results indicate that it is actually a dusting of nutmeg on top. Whatever, close enough. I knew something had been missing from my drinks, but, what I don’t understand is why. I’ve never once had a barista forget the topping on a Pumpkin Spice latte. Never, ever. Which basically drives home the point that Pumpkin Spice is the best flavor around, and I’m not the only one playing favorites.


While I love the Gingerbread lattes, and look forward to their return with anticipation around Christmas time (along with the Caramel Brulee (SO GOOD!)), Pumpkin Spice is far nearer and dearer to my heart than any other. At least that’s what I thought.

One day I got the bright idea to combine two of my favorite drinks: a Caramel Macchiato and a Pumpkin Spice latte, a Pumpkin Macchiato, if you will.

Roasted Spaghetti Squash with Caramelized Red Onions, Goat Cheese, and Toasted Walnuts


There are a few questions I don’t like being asked. “What size jeans are you?” “Did you want that with whipped cream?” “Can you give me the answer to this math problem?” Those are merely a sampling. They make me feel uncomfortable and unnecessarily stressed. I’ve carefully honed my behavior to avoid these kinds of questions (meaning I wear sweats, order Americanos, and refuse to take a math class until it is absolutely needed).


But lately, a question I can’t seem to escape is whether or not I am a vegetarian.

Growing up in Wisconsin, I didn’t encounter a whole lot of herbivores (I actually only knew one vegetarian before coming to college). Many times our family meals consisted of meat, potatoes, and more meat. Maybe some tasty biscuits from a can if we were feeling fancy.


Despite this meal plan, I managed to cultivate a strong taste for vegetables, particularly since coming to college. Raw, steamed, roasted, any way I can have them I will happily fill my plate. I include them in nearly every meal and feel very thrown off my axis if I don’t have any vegetables at all in a day. All very strange, I know.

Not all of my friends here share my outlook on, or love for, vegetables. I’ll talk about a dinner I made or order a meatless entree at a restaurant and be bombarded with a chorus of “Are you a vegetarian?”

Salted Caramel and Pumpkin Smashing S'mores


I’m sorry. I’ve been slacking lately. And I wish I could tell you why.


I’m normally a very punctual person. Possibly annoyingly so. I’m 10 minutes early to work, I’m always waiting on my friends to be ready to leave, I sit in the front of class by choice – getting there before majority of my classmates to pick my ideal seat (all pathetic and all true). 


And this treat right here? I’ve only been wanting to share it with y’all since the spring! Like, I thought of it in May during my history class (notes? Who takes notes?) and patiently waited until fall to bust it out. I mean, it’s pumpkin, caramel, spicy goodness. Basically the epitome of this glorious season.

And yet, I sat on this recipe. I stalled and waited and put it off and waited some more. I managed to share a pic on Instagram weeks ago, but that’s as far as I got…that, and eating all of these lovelies in 2.6 days. I am shamefully late in sharing these Salted Caramel Pumpkin Smashing S’mores. I kept the beautiful combination of pumpkin graham crackers, salted caramel swirled marshmallows, and sweet white chocolate coating all to myself. And for that, I am sorry.

Salted Caramel Swirled Marshmallows


My mom has always stressed to me the importance of spraying pans. Always. When I was first starting to bake this was the single most difficult thing for me to remember.

Far too many times, I would be pouring brownie batter (from my favorite boxed mix…because a 15-year-old newbie foodie knows no better. And boxed brownies are delicious) into a pan only to have my mom walk up behind me and say, “Did you remember to spray the pan?”


No. No, I did not.

The situation then went one of two ways. I would either 1) pour the batter back into the bowl and wash, dry, and then (finally) spray the pan and return the batter to it’s rightful place. Or 2) I’d tell myself I didn’t really need to spray the pan. It’s just a suggestion. A gimmick to get me to use one more product I don’t really need. The brownies would be fine.

I was an idiot.

Candied Ginger Scones


You know that episode of The Office where Michael burns his foot on a George Foreman Grill? I fear this may be my future. And by that, I mean burning my foot, not being the manager of a paper company’s Scranton branch.


See, the heat isn’t on in my apartment yet. This wasn’t such a problem the past few weeks, with the temperatures hovering around 60 most days and even passing 70 on occasion. But now, in the midwestern fashion of dramatic highs and even more extreme lows, the temperature dropped a solid 30 degrees overnight. And my apartment has become a very large, very expensive refrigerator. 

I have been keeping warm by wearing multiple sweaters, wrapping myself in blankets, and keeping the oven on to get a little bit of heat into the chilled wooden floors and icy window panes of my apartment.


While this last step may pose a fire hazard, I’m tired of feeling like a character in a Dickens novel. But, I have a new fear of slipping or tripping in my kitchen and putting my foot in the broiler. Of course, standing in front of the oven and alternately standing on my right foot, then my left, then back again, so I can evenly toast them may add to the likelihood of this outcome.

Pumpkin Graham Crackers


I don’t finish things. Food things. I mean, I do finish them...eventually. But, not right away. Nope. I am that person. You know, the one that leaves half a scoop of ice cream in the carton or a teeny, tiny spoonful of peanut butter in the jar or crumbs at the bottom of the chip bag. My family could certainly attest to this fact and how much it drives them nuts endears them to me. We all have our quirks, after all. 

I think it’s a psyche thing. Like, if I sit down with a pint of Ben & Jerry’s and really go to town, which, let’s be honest, is a frequent occurrence, and leave a little bit in the carton, I’m ok, it’s ok. I didn’t eat the whole thing. I have no reason to be guilty. None. No, there’s a paper thin layer on the bottom of the bucket and it’s totally enough for someone else to enjoy, right? Of course! Guilt trip averted.


I know I’m not alone here.

Peanut Butter S'mores Cups


This is it.


These s’mores cups are my last attempt to grasp hold of summer. To enjoy the fleeting heat and streaks of sun. To ignore the fact that it’s already September (woa) and already Labor Day (double woa).

I love fall. It is my favorite season. But I’m not quite ready for it. I want the boots and the sweaters and  the caramel spice and the falling leaves just as must as anyone else, but not right.this.minute.


I am done with work for the summer. I am putting off packing for school. I am looking at reading lists and scavenging for used books. I am dragging my feet.

Banana Zucchini Bundt Cake


I’m a big time control freak planner. I’ve written about this compulsion before. I like knowing what’s going to happen and when. I make lists of my lists and multiple copies of my work schedule every week. Nevermind that my to-do list is never done and I sometimes spread myself too thin when it comes to scheduling appointments, I am what I am. I am a planner.


Usually.

Lately, though, my baking hasn’t been as structured as I would like. I am forgetting canisters in cupboards or neglecting to gather all my tools in one place or not preheating the oven before I begin. I just feel scatterbrained and harried, often working with too many ideas and too little time. It’s been maddening to feel so unorganized in a space that I am usually so comfortable in, doing an activity that is usually so effortless and enjoyable. It had to stop.

I knew I needed a plan.

Mini Turkey Pitas with Avocado and Red Onion


I’m so sick of ham. Sick and tired of ham. Ham sandwiches. Hot ham and cheese. Dirty crockpot water ham. Yeah, you know what I’m talking about. The ham that is at every seemingly respectable church, community, or family event in the Midwest. It just sits in dirty water for 6 hours as people grab stale buns and make sandwiches with it for.the.entire.party. Makes my skin crawl just thinking about it.

I, on the other hand, have a much more refined palate and choose to snarf down taco dip and lemon squares and bbq baked chips like my life depends on it. But that's neither here nor there...


But, not every day holds such an occasion as the annual church picnic or a second cousins graduation party. On those days there is no dirty crockpot water ham (thank goodness). There’s just lunch.

Dark Chocolate Coffee Cupcakes with Marshmallow Coffee Buttercream


I get a lot of things from my dad. My brown eyes, olive skin, and “solid” build all come from him. My annoyingly obsessive attention to detail, dry sense of humor, and predisposition to mornings go to his credit too. While some of the traits I have gotten from him are genetic, I’ve also picked up a lot of learned behaviors from him over the years. Since I was a little girl I’ve been watching him and studying him and mimicking him – it’s only natural that some of his habits and traits would eventually become mine. For better or worse.


There’s one thing he does though that I will just not do. Never, ever will I be okay with doing this. Never, EVER. It is a habit so disgusting, so repulsive I can barely bring myself to write it (I’m really making you want one of those cupcakes up there, aren’t I?).

My father reuses day-old coffee.

There. I said it. And may have gotten a little queasy.

Eggs Fried In Peppers

I eat eggs every day. Sometimes multiple times a day. Eggs are quick, easy, and full of protein. They satisfy me after a tough workout or keep me full during my long shifts at work. While I don’t think it’s excessive (it’s normal to go through two dozen eggs solo in one week, totally normal) it can get a bit boring.



So when a friend sent me a link on Facebook showing me a new way to prepare eggs my first thought was “Man, how come I didn’t think of that!” and my second was “I know what I’m having for breakfast tomorrow.

Spinach and Jalapeno Salmon Cakes with Sauteed Kale and Cherry Tomatoes


I’ve been thinking about Baltimore a lot lately. Around this time last year I visited a friend from school there and had one of the best weeks of vacation, bar none. My memory has been able to retrieve the smallest details – the feel of the hardwood floor on my toes early in the morning, the spray of the water coming off the harbor cooling my hot skin, the sound of construction crews as they worked tirelessly on the road outside my friend’s apartment.


I remember my first meal there in vivid detail. Fresh off the plane (or as fresh as one can be after 4 hours of sleep and a nearly missed flight), we went to a Baltimore landmark, Miss Shirley’s, to sample a Baltimore classic, crab cakes.

Having had crab cakes in Wisconsin before and being less than impressed, my taste buds were primed to be disappointed. 

I love when my taste buds are wrong.

Foil Wrapped Salmon


I can’t even think of a witty story or anecdote to go along with this salmon. I think that’s because it’s nothing particularly special. It’s delicious! Don’t get me wrong, it is a tasty piece of fish. But it’s simple.

It’s the dinner I make for myself when my dad is working nights. He refuses to eat salmon and I refuse to make two separate dinners – so I save this meal for when it’s just me.

Normally I make this in the oven, but yesterday I tried it on the grill with great success.


Foil Wrapped Salmon
Serves: 4

2 - 8oz. filets of salmon, skin on

1 lemon, sliced, divided

1 TBSP Coconut oil (or butter)

Salt and pepper, to taste

Miscellaneous spices/herbs, to taste

Preheat grill over medium-high heat until internal temperature is between 350 – 375 degrees. Alternatively, preheat oven to 375 degrees.

Spray a large square of foil with olive oil spray. Lay salmon on foil, skin side down. Sprinkle with salt, pepper, and any additional spices or herbs (I use a seafood blend with sage, thyme, and rosemary, among others). Top with pat of coconut oil and lay lemon slices over filet. Wrap foil tightly around salmon to create a packet o’ fish. Repeat with other filet.


Grill (or bake) for 10 – 15 minutes, until fish is medium pink and flakes easily with a fork.

Peel off skin and serve with grilled or steamed veggies for a fast and healthy summer dinner!

Chocolate Barbecue Sauce Cupcakes with Browned Butter Brown Sugar Frosting...and Honey Cream Cheese Frosting...and Barbecue Chocolate Ganache

I was shopping the other day. As I am prone to do. I was just browsing, looking for a few things for my apartment for next year. Walking into the briskly air-conditioned store, seeking a soap dish and refuge from the 90+ degree heat and the inevitable thigh sweat it brings (there’s a mental image no one needed), I was flabbergasted by the sight of fall and even winter décor lining the aisles.


I stood there, upper lip glistening with sweat, wondering how people could be preparing for the winter months already. Wasn’t it just the 4th of July a few weeks ago? Aren’t we in the throes of our umpteenth heat wave this year? Aren’t there still beaches to go to and tan lines to acquire?


And the kicker? Majority of the summer items were marked down by 50%, if not 75% or more! While that enabled me to nab an adorable plate for mere pennies, it did leave me with a sinking feeling that the seasons will change, no matter how hard I will them not too. August will follow July and leaves will change from green to gold. The thermometer will plummet from 97 to -17 and we will all be complaining about how cold it is instead of how hot it is (part of the human condition, I suppose).
